American author Katie Lee Biegel once shared a simple high-protein dinner recipe
Author and celebrity chef Katie Lee Biegel understands the importance of quick, easy weekend dinners. However, with the emergence of protein culture, most people are now looking for quick protein-packed meals. Last year, in an Instagram reel, Biegel shared her favorite go-to high-protein dinner that she swears by on busy weekends.
The best part about the meal lies in its ease of making. All you need are the ingredients, one sheet pan, and about 50 minutes on hand. She called it the Sheet Pan Shrimp with Broccoli, and it not only looks but also tastes heavenly. She used frozen shrimp that she thawed while preparing the other ingredients.
“I can prep all the veggies and sauce while it thaws and the oven preheats,” she writes in her video caption.
Biegel made a homemade sauce from a mix of soy and hoisin sauce, rice-wine vinegar, honey, ginger, sesame oil, vegetable oil, Dijon mustard, garlic, and chili flakes.
She then coated the items- diced onions, shrimp, and broccoli florets in the sauce. Finally, she placed the vegetables on a sheet pan and baked them for 20 minutes at 400°F before adding the shrimp.
An additional 15 minutes, and the meal was prepared. She prefers serving this on a bed of white rice to bring out all the flavors. As for protein, this dish is packed with around 20 grams per 3-ounce serving, making it the perfect healthy and tasty option.
However, this simple sheet pan meal is just a small part of Biegel’s healthy living philosophy. Outside of the kitchen, she focuses on self-care and simple wellness habits for her mental health.
Inside Katie Lee Biegel's approach to healthy living
Biegel believes that well-being begins with consistency, not perfection. She stresses the importance of simple, healthy, and nutritious meals, regular exercise or movement, and adequate rest.
Moreover, she focuses on taking proper care of her physical and mental health for overall well-being.
As per an interview with The Purist in August 2024, she opened up about where wellness begins for her- food. “I think wellness really starts with what we eat. For me, the top of the pyramid is what I am eating, and I really make a commitment to have a colorful diet,” she said.
“I start my day with a big fruit bowl. I always have a big salad at lunchtime; I try to get lots of fruits and veggies in there. And sleep cannot be overrated. I love to go to bed early. I’m in bed at 9 or 9:30.”
She also talked about how, with age, she prefers to keep her exercise routine simple. Instead of intense gym sessions, she now prefers power walking, weightlifting, taking online fitness classes, or simple at-home workouts.
Most people resonate with Biegel’s approach as it proves how simple wellness can be.
